Sustainable Every Way, Every Day

As a farm-owned restaurant, sustainability is baked into every aspect of our business, from our building to our daily operations. We source our ingredients thoughtfully and responsibly, we opt for energy-efficient HVAC and lighting systems, we say no to plastic straws and Styrofoam, and we divert 90% of our waste from landfills through composting and recycling. By using organic, local, and humanely raised meats and ingredients wherever possible, we hope to steer the industry toward practices that are better for animals, farmers, and the Earth.

Simple Acts. Big Impacts.

  • We are committed to sourcing local, organic, and Certified Humane® meats, eggs and poultry.

  • We use sustainably farmed and organic ingredients in our dishes and shop locally whenever possible.

  • Our robust recycling and composting programs keep 90% of our waste out of landfills.

  • By offering bulk condiments for our dine-in customers, we avoid wasteful single-use packets.

  • We reduce our reliance on pesticides and insecticides by purchasing organic cotton uniforms.

  • Our Energy Star dishwasher, fryer and air conditioner are 30-40% more efficient than conventional models.

  • We use post-consumer waste packaging for carry-out meals, and our straws, menus, and bath tissue are made from recycled materials.

  • All our food waste, kitchen scraps and organic-material products are sent to Ayrshire Farm to be composted.

  • Our facility is Styrofoam-free, which keeps harmful chemicals and litter out of the environment.

  • We use LED lightbulbs, which use 90% less energy, and emit fewer greenhouse gases than incandescent bulbs.
